Ingredients

1 TBSP LIQUID MOZZARELLA

1/2 CUP SOY MILK OR MILK OF CHOICE

1/4 TSP BLACK SALT

PARSLEY

1/4 TSP ONION POWDER

1/4 TSP GARLIC POWDER

110G FIRM TOFU

50G SOFT TOFU

1 1/4 TSP NUTRITIONAL YEAST

PINCH TUMERIC

FEW SAFFRON THREADS

Black pepper to taste

Method

  1. Detailed instructions in the video above.

  2. Slightly warm the soy milk and add the saffron threads and turmeric. Leave to steep for a few hours or even overnight until a deep orange colour is reached.

  3. Break firm tofu into bite sized pieces.

  4. Combine all ingredients including the milk in a bowl and gently mix together.

  5. Heat a small saucepan over medium heat and pour in the scramble mixture.

  6. Gently cook whilst stirring occasionally until almost all the liquid is cooked off and the scramble is creamy.

  7. Serve on toast sprinkled with parsley.

  8. To store/food prep - before cooking just mix ingredients together and store in an airtight container for up to a week.

Tips and tricks

soaking the saffron overnight will ensure a rich yellow colour to your scramble.
