Ingredients

60 grams raw cashew nuts

3/4 cup hot water

1/2 Cup Plain unflavoured Yogurt

1 1/4 Teaspoon Lemon Juice

1 Teaspoon Salt

1 1/2 Teaspoons Nutritional Yeast

1 Teaspoon Agar Agar Powder

1/2 Teaspoon Xantham Gum

3 Tablespoons Tapioca Starch

65 grams melted refined coconut oil

Method

  1. Cover cashews with the boiling water and soak for 45 minutes or overnight. DO NOT drain.

  2. Place cashew with their soaking water into a high speed blender with the nutritional yeast, salt, xantham gum. lemon juice and yogurt.

  3. Blend on high speed until cashews are smooth.

  4. Add melted coconut oil and blend until combined.

  5. Add one tablespoon of COLD water to the agar powder. Stir and set aside.

  6. Add tapioca starch to the blender and blend well, scraping down sides if needed.

  7. Add dissolved agar powder to the blender and blend until distributed evenly.

  8. Pour into a jar or bottle and store up to two weeks.

  9. To use pour as is onto pizza or lasagne. Dilute with a little pasta water if making Mac n Cheese.

  10. Mixture will thicken in the fridge. Just place the jar/bottle into a bowl of warm water and stir or shake until it liquifies again.

Tips and tricks

when using on pizza layer it up. baking in between layers!

use it thick straight from the fridge for nachos.

Delicious served as part of a creamy pasta sauce!
