POLENTA CHIPS

Delicious polenta chips

Ingredients

1 cup polenta

1 1/2 cups cold water/milk of choice

1 1/4 tsp salt

1/4 tsp chikun stock

1 1/2 cups boiling water

1/4 tsp onion powder

1/4 tsp garlic powder

1 tbsp nutritional yeast

1 tbsp vegetable or canola oil (Can be replaced with plain unflavoured yogurt for an oil free option or liquid mozzarella for a cheesy flavour)

Black pepper to taste

Method

  1. Detailed instructions can be found in the video above.

  2. Grease a square dish ready to pour the finished polenta into and set aside.

  3. Mix the stock, salt, garlic and onion powder into the boiling water and set aside.

  4. In a saucepan mix the polenta with the cold water. Add the nutritional yeast and oil or yogurt and stir to mix.

  5. Stir in the boiling water mixture and pepper to taste.

  6. Place the saucepan on the stove and bring to the boil whilst stirring. As soon as it reaches a boil reduce the heat to simmer and cook 8-10 minutes with the lid on. Stir occasionally.

  7. Pour cooked polenta into the greased dish and place into the fridge to set for a few hours.

  8. Once polenta is firm carefully turn the block onto a cutting board and slice into chips.

  9. Cook in an oven, air fryer, shallow fry or deep fry. Serve with aioli.

  10. Chips may be flash frozen and then stored in the freezer for a few months. Cook from frozen when using.

serve with a homemade pie, some fresh salad and a big bowl of aioli.
