Ingredients

3 Cups / 355 grams Rolled Oats

2 Over Ripe bananas, mashed well

1 Cup / 190g buckwheat

1/2 Cup / 80g NUTS, chopped

1 tsp flaxseeds

1 tsp chia seeds

1 Tbsp Pumpkin seeds / pepitas

1 tbsp cinnamon

pinch ginger

pinch salt

1 tsp nutmeg

1 tsp vanilla extract

2 tbsp maple syrup

1/2 C dried fruit of choice

Method

  1. Preheat oven to 160C or 320F

  2. Line two trays with baking paper and set aside.

  3. Place all ingredients except the dried fruit into a large bowl and mix well.

  4. Once very well mixed spread out evenly onto baking trays.

  5. Place in oven and bake for 10 minutes before stirring and placing back in the oven.

  6. Repeat the baking and stirring until the granola is golden brown. Stirring the granola ensures it browns evenly.

  7. Once cooled add in your dried fruit.

  8. Store in a large glass jar like this for two weeks.

  9. Serve with some homemade Creamy Oat Yogurt and fresh or frozen berries.

Tips and tricks

swap out the bananas for tinned apricots or whatever tinned fruit you have handy. just drain first.

use any nuts or dried fruit you have handy. a great way to use up quantities too small for other recipes. just combine them!

store in glass jars like this one. label with your use by date.

Don’t use quick oats - old fashioned rolled oats are best.
