Ingredients

Wholemeal or plain flour

Water

Method

  1. To a large jar add 1 TBSP flour and 1 TBSP water.

  2. Stir to mix.

  3. Cover with cheesecloth or paper towel held in place with a rubber band.

  4. Allow to ferment at room temperature (out of direct sunlight) until the next day.

  5. Add 2 TBSP Flour and 2 TBSP Water and mix well. Allow to sit over night at room temperature again.

  6. Add 3 TBSP Flour and 3 TBSP Water and mix well. Allow to sit over night at room temperature again.

  7. Add 4 TBSP Flour and 4 TBSP Water and mix well. By now you may be starting to see some bubbles forming. Allow to sit over night at room temperature again

  8. Add 5 TBSP Flour and 5 TBSP Water and mix well. After a few hours you should see some bubbles forming. Allow to sit overnight one last time.

  9. If you now have a bubbly fermented starter you can give it a large feed and bake a few hours later.

  10. If not using your starter just store in the fridge, feed a few hours before using. Always preserve some of your starter to feed for the next loaf to save making a whole new starter each time.

Tips and tricks

Normal flour is absolutely fine for your starter no need to use bread flour.

If you find you have too much starter use it for wraps, bagels or cookies and biscuits.

Your starter will last decades if cared for!

Always reserve some of your starter to use for your next loaf of bread.
