Ingredients
385 grams wholemeal flour
8 grams salt
80 grams starter
288 grams room temperature water
Method
Mix sourdough starter and water together in a large bowl and set aside.
Mix flour and salt together and set aside.
Add combined flour and salt to the starter and water mixture.
Mix for a few minutes with a knife until combined.
Cover bowl with a wet tea towel and set aside for 1.5 hours.
Do the first of three “mangles” on the dough. Wet your hands and lift out your dough. Move it around and stretch and play with it for 30-60 seconds.
Place back in the bowl, cover with the damp tea towel and set aside for another 1.5 hours.
Do the second of three “mangles” like the first. Replace the dough in the bowl and recover with a damp tea towel. *See video
Set aside for another 1.5 hours and then perform the last “mangle” of the dough.
Set aside for 4 hours to ferment and almost double in size.
After 4 hours (8.5 hours since bread was first mixed) turn onto a floured surface and shape the dough. *See video.
Place dough into a floured banneton, sprinkle some flour on the top and slap/pat flat. *See video.
Place in fridge uncovered overnight.
The next day pre heat oven to a very hot 250 Celsius and place a Dutch oven into the oven to preheat.
Turn the loaf onto a sheet of baking paper.
Score the loaf and then place in the pre-heated Dutch oven. Spray well with water and then place the lid on.
Bake bread in the oven for 30 minutes with the lid on.
After 30 minutes remove the lid and reduce the oven to 220 Celsius. Bake for a further 20-30 minutes or until desired crust is reached.
Bread is cooked when tapping on the bottom sounds hollow.
Allow to cool on a rack for at least an hour before slicing and enjoying!
