Ingredients

1/2 Cup Quinoa

1 Litre Water

extra water for rinsing and soaking

Method

  1. Rinse quinoa and place into a large jar.

  2. Cover quinoa with water ensuring the water is a few inches higher than the quinoa.

  3. Place cheese cloth or paper towel over the jar and allow to sit at room temperature for 12-24 hours.

  4. The next day drain the water off. Allow the grains to start to sprout. Rinse and drain twice a day until sprouts form. *See video

  5. Once quinoa has sprouted fill the jar with water and place a non permeable lid on the jar.

  6. Allow it to sit for 1-2 days until the liquid is cloudy and has small bubbles at the top.

  7. Drain out the sprouts reserving the Rejuvelac.

  8. The Rejuvelac can be stored in the fridge for about three weeks.

Tips and tricks

Great for pickling vegetables.

Add a tang to any drink by adding a few teaspoons of rejuvelac to them.
